I have some exciting news this for this Valentine Day. Diana’s Spice Cantina will be coming out with three new Middle eastern spice blends and I’ll be premiering them at my Valentine Day Cooking Class at Audrey Claire’s Cook this coming Wednesday, February 14. Dukkah, Harissa and Za’atar will be making their grand appearance at the cooking class, while the Zhoug Hot Sauce will be up on the website available for purchase.
Here is a sneak peek of one of the dishes on the menu; Seared Scallops with Dukkah. Dukkah is an Egyptian nut and seed spice blend that derives its name from the Arabic word “to crush” which is the action taken to make this exotic blend. The main ingredients in my blend are hazelnuts and sesame seeds, which are toasted to extract the oils for a more pronounced flavor, along with the popular east Asian trio of coriander, cumin and fennel, some of which contain aphrodisiactic properties. So, go ahead and heat things up in your kitchen! This spice blend adds a nice crunchy texture to the plump scallops.
All of the spice blends will be available for purchase on the website on Valentine Day. I’ll be back at Cook in April 2018 to present my new Spring Line of Spice Blends.
